homemade egg noodles

CLINT0N: You all wouldn't believe the difference between fresh homemade noodles and even the soft bagged ones ya buy in deli sections. I just made Linguine for my first time, and it was awesome!

* 2 to 2-1/2 cups Durum semolina flour,
* 1/2 teaspoon salt
* 3 eggs, lightly beaten
* 1 tablespoon cold water
* 1 tablespoon olive oil

Make a bowl out of the flour.
Add salt. Pour the eggs in.
Add olive oil.
Oil means flavor..dont cheap out!
Mix the batter until its smooth and holds together well, using enough water to make it hold together and kneed easily, but not make it too sticky. You may have to add a bit of flour to the mix.
Divide the dough into 8 small cylinders. Roll the cylinders flat on a smooth floured surface, careful to get it as thin as possible. Cut them in 1/4 inch (6 mm) strips and place each strip on a clean tea towel to dry for 15 minutes. Cook in boiling water for 3 to 5 minutes.This recipe works for Lasagna noodles, or soup noodles too! just allow for size differences. Lasagna noodles do not need to cook prior to laying them in the lasagna pan!

Roxy Rowla: if you have a noodle machine, be sure to omit the salt though! it will ruin the rollers in your machine. I make my own noodles all the time, taste so much better than store bought

Roxy Rowla: i used to do that too, but i make them with my momma and we dry them out fully. We use our own recipe and make A LOT, so the machine is needed

Roxy Rowla: Zanjan, I let my KitchenAid do all the mixing for me...and then I use my noodle attachment to do the rolling and the cutting....I LOVE that machine
