Place butter in a shallow bowl. Combine the bread crumbs, cheese and salt in another shallow bowl. Dip chicken in butter, then roll in crumbs. 2. Place in a single layer on two 15x10x1-in. baking pans. Bake at 375° for 15-18 minutes or until no longer pink, turning once. Serve with marinara sauce if desired. PS. Freeze option: Cool chicken nuggets. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Place on a baking sheet and reheat in a preheated 375° oven 7-12 minutes or until heated through. (Post deleted by seri8888 ) La Dolce Vita: Basic Biscuits (Makes a lot of Biscuits) Ingredients 500 grams Butter softened to room temperature 395 grams Condensed Milk Sweetened 1 cup Sugar 5 cups Self Raising Flour Method Preheat oven 180 degrees. Cream together the softened butter and sugar until light and fluffy. Add the condensed milk and sifted self raising flour, mix to form dough. Add the flavors of your choice (see below) and either cook right away or freeze! If you are cooking the biscuits right away: Roll into teaspoon sized balls and press down with a fork (dip the fork in flour first so it doesn't stick). Place on a baking tray lined with baking paper. Bake in oven for 10-15 minutes until golden brown. Note: For a less 'floury' biscuit - substitute half a cup of flour for 1/2 cup of custard powder. If you wish to use cookie cutters, add more plain flour to make the dough stiffer. To Freeze the Dough: After adding the flavor of your choice, roll the dough into a 20cm 'log' about 4cm or so thick. Place the cookie dough log onto a sheet of baking paper and roll up. Twist the ends to seal, use a marker to note the flavor, and place on a flat surface in the freezer for up to four months. When you want fresh biscuits, preheat the oven to 180 degrees, remove the frozen log from the freezer and whilst still frozen, unwrap and cut into 4mm slices or 'coins'. Place the frozen dough pieces onto the baking tray and cook as directed Suggestions for Flavors : Chocolate chip or white chocolate chip Cornflakes and sultanas Hundreds and Thousands Malted Milk Milo and coconut Peanut Butter Chocolate with Dried Ginger Dried Apricot with ginger and rolled in coconut White Chocolate and Macadamia Nut Sultana and Orange Zest. First FOODS OF ORIGIN country = ITALY Spaghetti Bolognese Ingredients 250g(more if you like) mince beef (You might like to half the mince and turn them into mini or big meatballs as it is or add some spice like chilli powder, garlic powder/mince, salt and pepper ) 1 cup of mix frozen carrots, peas, corn (or cubes your own fresh vegetables) 1 onions 2-3 garlic cloves 1 tablespoon tomato puree 1 bottle of spaghetti sauce (any brand, 500g or thereabouts) 1/2 a package of spaghetti(boil as instructed) Parmesan cheese powder or grated to be added before serving (optional) Method 1 (Easy and no oil) Mince garlic and onions Pour everything into a pot *except the vegetables When sauce is boiling add vegetables wait for it to start boiling again and mince cooked Add salt and if you like pepper to taste *If needed add water I always make the sauce first and cook/boil spaghetti after or when I'm ready to eat. You can freez the spaghetti sauce too. (You can use any shape pasta but spaghetti is the traditional pasta used) Method 2 Fry dice onion till a bit brown add tomato puree and mince garlic Add mince meat wait till cooked, stirring a few time Add spaghetti sauce When sauce started boiling add vegetables Wait till boil again about 5 minutes Chicken Cacciatora Ingredients for 4 people or 4 meals 8 pieces of dark meat chicken (Thighs and Drumsticks) 3 Celery Stalks cut into 1/4 inch pieces 300g mushrooms cubed (Portobello mushrooms preferably) 2 small shallots sliced 2 medium onions cut into 1/8ths 2 sprigs fresh rosemary (optional) 800g crushed tomatoes extra virgin oil to cover the bottom of the pot flour for dredging salt and black pepper Method Season the chicken with salt and black pepper. Add the chicken back to the pot. Add mushrooms Add the tomatoes. Bring to a boil and simmer. Salt to taste. Cover and simmer about 5 minutes for the mushrooms to soften. Uncover until sauce is reduced and chicken is tender about 15 mins. Remove the rosemary sprig and serve. *Tip- add salad as side dish to add more vegetables in diet This dish can also be serve with pasta or any one of the other carbohydrates such as rice, potatoes (boil, bake, mashed, chips/fry), bread -the usual white slice but I always prefer the taste of wholemeal or ciabatta, baguette, flatbread either Italian piadina, pita, lebanese even Indian like chapati or pratha.
