OCD_OCD: You don't have to use casings. You can actually use moistened corn husks to shape and freeze them. The sausages freeze better that way and when you thaw them, you can put them on the grill and smoke them. Yummy.

OCD_OCD: Of course we eat moles. They are really good when stewed, but you need to be sure to save the whiskers to pick your teeth with afterwards. Some moles are kinda....chewy.
