1 BugHug: The backstory is lunch was catered for a meeting at my work last week and there were leftover treats for everyone afterward. I don't generally have a sweet tooth but I tried a cookie that was sitting there and OMG, best cookie I had EVER had! I looked at the caterer's menu to figure out what kind and it said white chocolate and cranberry so ran to Google to find a recipe. I added pecans because....pecans () and took a taste today and they are the same!!! Recipe to follow BugHug: Ingredients: 1/2 cup butter softened 1/2 cup packed brown sugar 1/2 cup white sugar 1 egg 1 tablespoon brandy (I used vanilla extract because I prefer the flavour better) 1 1/2 cup all purpose flour 1/2 teaspoon baking soda 3/4 cup white chocolate chips 1 cup dried cranberries 1/2 cup pecans (optional) Directions: 1) Preheat oven to 375 F (190 C). Grease cookie sheets if don't have non-stick 2) In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy (vanilla). Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries and pecans. Drop by heaping spoonfuls onto cookie sheet. 3) Bake for 8-10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for a minute on the cookie sheets before transferring to wire racks. orangemoon8: My Grandmother used to make cookies with a recipe almost like that, she left out the cranberries. When my Mom baked, she left out the cranberries and pecans...... |
