Friends | papasmurfmarried 5 times wife 78 papabob: 77 5 wifes 4kids 5 greatgrand kiks 3 years ago • Report • Link 1 HurricaneZay: hey bob i dont see your email addy so i will just put it here sorry for the long post 20 cups onions in a rough chop (dont make it to small it cooks down) 1 1/2 teaspoon canning salt 1 stick of real butter 2 1/4 cups balsamic vinegar (i use high end organic) 3 1/2 - 4 cups of brown sugar melt butter in large pot add onions and salt use med low heat keep covered allow to cook down to a dark caramel color stirring every 10-20 minutes (this step can take over an hour and a half and sometimes longer) can start the water bath heating up with the lid off cook for another 10-15 minutes or until slightly thicker add vinegar mixing well add brown sugar 1/2 cup at a time stirring and mixing well (dont use more then 4 cups) bring to a boil cook for 15 more minutes to a rolling boil when sugar is completely dissolved start adding it to either 1/2 pint or pint jars leaving 1/4 inch head space try to get equal parts onion and liquid in each jar wipe rims add lids and put into water bath for 10 minutes turn off heat and let sit in water bath for 5 more minutes let set for at least 24 hours can be kept on a shelf unopened for 1 year once opened can be kept in fridge for 2 months enjoy (Post deleted by vwsmoonroverx ) |
