I often wonder why, on these single-crop farms, they don't plant something between rows that will help to replenish the soil. I know they need to maneuver through the rows, but a cover crop like clover that reduces the need for fertilizer and pesticides and isn't harvested (except as fodder perhaps) seems doable. At least this is what we teach farmers in other countries.

That happens during the winter months. Often it's mustard, which also looks really pretty. It gets plowed in, and works just like you describe. There's another plant I often see, but I don't know the name of it. And there's wildflowers, too. They all get recycled back into the soil. So does the trimmings and the thinned grapes. There seems to be little or no need for pesticides. The vines apparently aren't very tasty for pests.
